Arroz A La Cubana

This is what we had for dinner last night. I've been working late and didn't really felt up to going grocery shopping. So I raided the fridge looking for what I could whip up and I found a pack of ground beef in the freezer. I went to Miss Connie's site, pinoycook.net, searching for dishes that required ground beef. I found this.

Note: I didn't have potatoes, sweet peas, parsley or saba bananas...so I made do with what I could find in the kitchen. It tasted great. Now, I'm wondering how much better tasting the dish would have been if I had all the ingredients. Oh well, I could always cook another batch (with complete ingredients this time).

Pinoy BeefSteak

Last night was bistek night. It was delish!. It was the second time I made this dish, and it still tasted great! I guess that means the first time wasn't a fluke. LOL. I asked my hubby what he thought about it, and he said it was g-o-o-d. Oh my! Ethylene's Pulitzer Prize in the kitchen. And it's all because of pinoycook.net. Thanks Miss Connie!

Note: I also made "kinilaw" na cucumber, with salt, vinegar, sugar and ground black pepper...yummy!

Hola!
My husband fancies himself an expert on Mexican food. Hahaha. But he does come up with excellent dinners, like this chicken fajita dish we had tonight.

Chicken Adobo
I found this recipe online as I was looking for new ways to prepare chicken other than baking it. I suppose this is a traditional Filipino recipe, although it called for a combination of pork and chicken. I used all chicken on mine. The picture quality is not so good but you can see the dish just drowning in grease. Hahaha. My hubby actually said it tasted good...but greasy. This recipe had too much sauce. I am used to chicken adobo being a little drier. I found another recipe online that didn't call for as much liquid, so perhaps I am gonna try that sometime.

Note: I added some jalapeno peppers to give the dish a little bit of a kick.

Is This Diet Food?
I am re-reading this book. Hope it works this time. Haha.

I wonder if this is considered diet food? Hmnnn...

Hubby and I went to Kroger last night, for an entirely different reason. I came home with eel sushi roll. I think that is a good trade-off, don't you think?
